Ingredients
- 1 lb boneless skinless chicken breast, diced
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 bell pepper, diced
- 1 can (15 oz) pineapple chunks, drained (reserve ¼ cup juice)
- 2 cups cooked white rice
- 2 tbsp soy sauce
- 1 tbsp honey
- ½ tsp garlic powder
- ½ tsp ground ginger
Instructions
- Prepare all ingredients by dicing the chicken and bell pepper and draining the pineapple while reserving juice.
- Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook until browned and cooked through (6-8 minutes).
- Stir in the diced bell pepper and cook for an additional 2-3 minutes.
- Add drained pineapple chunks to the skillet and cook for another 2 minutes.
- In a small bowl, whisk together reserved pineapple juice, soy sauce, honey, garlic powder, and ground ginger.
- Pour the sauce into the skillet over the chicken mixture; stir well to coat evenly. Simmer uncovered for about 4-5 minutes until slightly thickened.
- Serve over cooked rice or in lettuce wraps as desired.
