  • 1 can (15 oz) pineapple chunks, drained (reserve ¼ cup juice)
  • 2 cups cooked white rice
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • ½ tsp garlic powder
  • ½ tsp ground ginger

Instructions

  1. Prepare all ingredients by dicing the chicken and bell pepper and draining the pineapple while reserving juice.
  2. Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook until browned and cooked through (6-8 minutes).

  4. Add drained pineapple chunks to the skillet and cook for another 2 minutes.
