Ingredients
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon kosher salt
- 1 box (3.4 oz) instant pistachio pudding mix
- 6 tablespoons cold unsalted butter, diced
- 1/4 teaspoon vanilla extract
- 1 large egg
- Chocolate chips (up to 1/2 cup)
- 2/3 cup heavy cream
- Coarse sugar for sprinkling
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together flour, sugar, baking powder, salt, and pistachio pudding mix.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Make a well in the center and add vanilla extract, egg, and half of the heavy cream. Stir until combined and then gradually add more cream until the dough holds together.
- On a floured surface, divide dough in half; shape each half into a rectangle about ½ inch thick and sprinkle chocolate on top before folding over.
- Cut each rectangle into triangles and place on the prepared baking sheet.
- Brush tops with remaining heavy cream and sprinkle coarse sugar over them.
- Bake for 13-15 minutes until golden brown.
