  • 1 box (3.4 oz) instant pistachio pudding mix
  • 6 tablespoons cold unsalted butter, diced
  • 1/4 teaspoon vanilla extract
  • 1 large egg
  • Chocolate chips (up to 1/2 cup)
  • 2/3 cup heavy cream
  • Coarse sugar for sprinkling

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, salt, and pistachio pudding mix.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Make a well in the center and add vanilla extract, egg, and half of the heavy cream. Stir until combined and then gradually add more cream until the dough holds together.
  5. On a floured surface, divide dough in half; shape each half into a rectangle about ½ inch thick and sprinkle chocolate on top before folding over.
  6. Cut each rectangle into triangles and place on the prepared baking sheet.
  7. Brush tops with remaining heavy cream and sprinkle coarse sugar over them.
  8. Bake for 13-15 minutes until golden brown.
