Ingredients
- 2 slices whole grain bread
- 1/2 avocado, sliced
- 1/2 cup fresh spinach or baby greens
- 1/2 cup cherry or heirloom tomatoes, sliced
- 1/2 cup mushrooms, sliced (button or cremini)
- 2 eggs
- 1 tbsp olive oil or butter (for sautéing)
- Salt and freshly cracked pepper, to taste
- Chopped parsley or chives, for garnish
Instructions
- Cook the Eggs: Boil water in a pot, reduce to simmer, add eggs gently, and cook for 7–8 minutes. Transfer to ice water to cool before peeling and halving.
- Sauté the Mushrooms: Heat olive oil in a frying pan over medium heat. Add sliced mushrooms and cook until golden brown and tender (5–7 minutes). Season with salt and pepper.
- Assemble the Bowl: Toast the bread slices. On a plate or bowl, layer fresh greens first, followed by sautéed mushrooms, avocado slices, tomatoes, and halved eggs. Serve toast on the side.
- Garnish & Serve: Sprinkle with extra salt and pepper as desired and add fresh herbs for flavor. Enjoy warm!
