- 1 small red onion
- 1 cup cherry tomatoes
- ½ cup Kalamata olives
- 3 garlic cloves (minced)
- 1 tbsp Greek seasoning (oregano, thyme, salt, pepper)
- 1 tbsp red apple vinegar
- 2 tbsp olive oil for seasoning
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup crumbled feta cheese (optional)
- Fresh parsley (optional garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, Greek seasoning, and vinegar.
- Add chicken, ensuring it's well-coated in the marinade; let sit for at least 10 minutes.
- Slice all vegetables and toss them in a bowl with olive oil, oregano, salt, and pepper.
- On a lined baking sheet, place marinated chicken in the center and arrange seasoned vegetables around it.
- Roast for about 20 minutes until chicken is cooked through and veggies are tender.
- Optional: Sprinkle feta cheese on top before serving and garnish with parsley.
