- 1 cup old-fashioned rolled oats
- 2 medium overripe bananas
- 2 eggs
- 1 tsp baking powder
- ½ tsp ground cinnamon
- ⅓ cup chopped strawberries (plus more for topping)
- ¼ cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (180°C).
- In a blender, combine the oats, bananas, eggs, cinnamon, and baking powder. Blend until smooth.
- Transfer the mixture to a mixing bowl and gently fold in the chopped strawberries.
- Pour the batter into a mini muffin pan and top with sliced strawberries and optional chocolate chips.
- Bake for about 15 minutes or until a toothpick comes out clean.
