Instructions
- In a medium saucepan, whisk together the water and cornstarch until smooth.
- Stir in the sliced strawberries, sugar, lemon juice (if using), and a pinch of salt.
- Cook over medium heat, stirring gently until it reaches a boil.
- Boil for 30-60 seconds before reducing the heat to medium-low.
- Simmer for 8-10 minutes until thickened; it should coat the back of a spatula.
- Remove from heat and cool completely before using.
