- 1 cup butter
- 1 1/2 cups granulated sugar

- 1 tsp vanilla extract
- 2 tsp strawberry extract
- 2 tsp pink food coloring
- 2 3/4 cups all-purpose flour

- 1/2 tsp baking powder
- 1 block cream cheese
- 1/2 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a mixing bowl, cream together butter and granulated sugar until fluffy. Add egg, vanilla extract, strawberry extract, and pink food coloring; mix well.
- In another bowl, whisk together flour, baking soda, and baking powder. Gradually add to wet ingredients until combined.
- Spread two-thirds of the cookie dough into the prepared pan.
- For the cheesecake filling, beat cream cheese, powdered sugar, vanilla extract, and strawberry extract until smooth. Spread over the cookie base.
- Crumble reserved cookie dough over the cheesecake layer.
- Bake for approximately 30 minutes until golden brown on top. Allow cooling before slicing.
