Ingredients
- ¾ cup sugar
- ½ cup milk
- ½ cup oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- 1 ½ cups diced strawberries (fresh or frozen)
- 2 tablespoons all-purpose flour (for coating strawberries)
Instructions
- Preheat your oven to 350°F and grease a 9×5 inch loaf pan.
- In a medium bowl, whisk together sugar, milk, oil, eggs, and vanilla until well combined.
- In another bowl, mix together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and stir gently until just combined.
- Toss diced strawberries with the additional flour to coat them evenly before folding them into the batter.
- Pour the batter into the prepared loaf pan and bake for about 55-60 minutes or until a toothpick inserted comes out clean.
- Allow to cool in the pan for about 5 minutes before transferring to a cooling rack.
