- 1/4 tsp ginger
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Prepare the sweet potato by microwaving or roasting until tender. Mash until smooth.
- In a mixing bowl, cream together softened butter and sugars until fluffy. Mix in the egg, vanilla extract, and mashed sweet potato until well combined.
- In another bowl, whisk together flour, spices, baking soda, and salt.
- Gradually add dry ingredients to wet mixture and stir until no flour streaks remain; avoid overmixing.
- Drop balls of dough onto parchment-lined baking sheets spaced two inches apart.
- Bake in a preheated oven at 350°F for 10–12 minutes until edges are golden brown.
- Allow cooling on the pan for about five minutes before transferring to wire racks.
