Ingredients
- 1 lb lean ground beef
- 2 cups sweet potatoes, peeled & diced
- 1 medium zucchini, sliced into half-moons
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp cumin
- Salt & pepper to taste
- Fresh parsley for garnish
Instructions
- In a large cast-iron skillet over medium-high heat, brown the ground beef until crumbly. Season with salt, pepper, and smoked paprika.
- Stir in minced garlic and chopped onion; cook until soft and fragrant.
- Push the beef to one side of the skillet; add olive oil and sweet potatoes. Cook for 10–12 minutes until fork-tender.
- Mix in zucchini; cook for an additional 5 minutes until slightly tender.
- Garnish with fresh parsley before serving hot.
