  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup cold butter, cut into cubes
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces semi-sweet baking chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips, divided
  • 3/4 cup coarsely chopped walnuts

Instructions

  1. Preheat your oven to 400°F (200°C) and line two cookie sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt. Set aside.
  3. In a stand mixer or using a hand mixer, cream together cold butter, light brown sugar, and granulated sugar until smooth.
  4. Add the cold egg and vanilla extract; mix until fully combined.
  5. Gradually add the dry ingredients from step two along with chopped chocolate and one cup of chocolate chips. Mix on low speed until just incorporated.
  6. Scoop dough into ten equal portions onto the prepared baking sheets, pressing additional chocolate chips on top if desired.
  7. Bake for 12 to 13 minutes until edges are golden brown. Cool on the sheets for five minutes before transferring to a wire rack.
