Ingredients
- 2 cups all-purpose flour
- 1/2 cup cake flour
- 1 tablespoon cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup cold butter, cut into cubes
- 1 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg, cold
- 2 teaspoons pure vanilla extract
- 4 ounces semi-sweet baking chocolate, chopped
- 1 1/8 cups semi-sweet chocolate chips, divided
- 3/4 cup coarsely chopped walnuts
Instructions
- Preheat your oven to 400°F (200°C) and line two cookie sheets with parchment paper.
- In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt. Set aside.
- In a stand mixer or using a hand mixer, cream together cold butter, light brown sugar, and granulated sugar until smooth.
- Add the cold egg and vanilla extract; mix until fully combined.
- Gradually add the dry ingredients from step two along with chopped chocolate and one cup of chocolate chips. Mix on low speed until just incorporated.
- Scoop dough into ten equal portions onto the prepared baking sheets, pressing additional chocolate chips on top if desired.
- Bake for 12 to 13 minutes until edges are golden brown. Cool on the sheets for five minutes before transferring to a wire rack.
