- 6 cups Mixed Spring Greens
- 1.5 cups Orange Segments (Mandarins)
- 1 cup Pomegranate Seeds
- 1 cup Crumbled Feta Cheese
- 1 cup Candied Pecans
- 1/3 cup Olive Oil
- 2 tablespoons Honey or maple syrup
- 1 tablespoon Dijon Mustard
- 2 tablespoons Apple Cider Vinegar
- 1 Shallot (minced)
- Salt and Pepper
Instructions
- Wash the mixed greens and place them in a mixing bowl.
- Peel and segment the mandarins, adding them to the bowl.
- Sprinkle pomegranate seeds over the greens and oranges.
- Add crumbled feta cheese and chopped pecans; gently toss to combine.
- In a small bowl, whisk together olive oil, honey, mustard, vinegar, minced shallot, salt, and pepper.
- Drizzle dressing over the salad; toss gently to coat evenly.
- Serve immediately on a platter or individual bowls.
